Why are my texture sizes being automatically decreased when I launch my game on iOS?

Hey all, I've been at this for a while now and I have no idea how to fix this issue. I've imported a few art assets into my project from the voxel editor Qubicle as .dae files. They look great in game and even on the unity remote. However when I build the game via xCode and launch it on my iPhone, all of my textures decrease in size. To make this more clear, the sizes were great at both the 1024 and 512 sizes in Unity, but when I deployed the game via xCode it automatically changed the texture size to 256. After a while of playing around with the player settings, I ended up re-doing my assets and creating them to fit the 256 size. Then once I deployed it via xCode it shrunk the size again to 128. I'm fairly new to Unity and game making in general and was wondering if I was just missing something simple or if this was a more complex problem. Any and all advice would be appreciated :) Some things I've already tried: - Changing the format from compressed to 16 bits / true color - Changing the default quality levels via quality settings - Turning off the auto graphics API via Player Settings - Praying to the Dark Lord C'thulu
